Since there's the brill demoscene seminar video post (http://www.dbfinteractive.com/forum/index.php?topic=5616.0) i thought i'd drop any thing decent OpenGL / OpenGL ES related I find in here.
There are some good intro videos by several universities on youtube which i'll dig out soon.
(will purposefully avoid tutorials obviously written as a method of self-documentation..)
Post on the Raspberry Pi forum where someones collected samples that will build on the Pi and Windows (http://www.raspberrypi.org/phpBB3/viewtopic.php?f=68&t=33742)
(they have a dedicated opengl es (http://www.raspberrypi.org/phpBB3/viewforum.php?f=68) section and a graphics prog (http://www.raspberrypi.org/phpBB3/viewforum.php?f=67) section too)

Stanford University (March 9, 2010) David Jacobs provides and introduction to OpenGL ES. Coordinate systems and tranformations, drawing geometry, textures, and other details.

site layouts a bit pants, but seems to be lots of useful bits in there..
plus starts with desktop GL 2.1 and progreses to 3.0+ so lots of modern GL shader related bits
